It is another wonderful day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our volunteers today, cooking over fire using our handmade earthen rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.
Today we whipped up a quick, easy, nutritious, and delicious feast of tilapia, potatoes, and asparagus for our volunteers!
Noki wanted to help and jumped right in. Onions and mushrooms went in the pan first with a bit of butter. Once they were nice and brown, we added the asparagus and covered the pan to give it a little steam - only about 3 minutes of steam and then pull the lid off.
Noki gave it all a good stir, and after another minute or so we got the veggies out of the pan, covered them, and set them aside to do the fish.
We added some herbs, garlic, and fresh lemon juice to the tilapia and then dusted the filets with a thin coat of flour to add a bit of a crunchy texture to the outside of the fish.
We pan seared the fish in a nice base of hot butter, adding more butter when we flip, about 6 minutes in.
We served the fish with a dish of mixed mashed potatoes by boiling a quick coarse chop of 5 sweet potatoes and 5 russet potatoes. We strained out most of the water, leaving about 2 cups in the bottom of the pot, then got out the trusty hand masher, added in about half a stick of butter! Quick, easy, nutritious, delicious - check!
