Cooking with Carrie - Carrot Avocado Soup

Hungry for Health Recipe: Carrot Avocado Soup

Ingredients:

  • 2 C fresh carrot juice (8-10 large carrots)
  • 2 avocados
  • 1/2 tsp ground cumin
  • 2 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/4 C fresh apple juice
  • 1/2 C sprouts
  • pinch sea salt
  • dash allspice

In a blender, combine the carrot juice and avocado. Add the lemon juice, vanilla, apple juice, salt and spices and blend again. Garnish with sprouts and serve cold.

Yield: 3-4 servings
