Recipe time - VEGAN SCRAMBLED EGGS

Ingredients (recipe serves 2-3)

I'm probably the worst person to describe a recipe because I always eyeball everything but I will do my best to estimate the serving sizes.

  • 1/2 paprika powder
  • 1/2 tbsp cumin powder
  • 1/4 tbsp turmeric
  • 1/4 tbsp chilli powder or chilli flakes
  • black pepper
  • onion powder (not necessary to make this recipe work)
  • 1/2 tbsp sea salt
  • any kind of oil
  • 250g tofu
  • water to thin

Feel free to add more seasoning to your liking.

Once you get a block of tofu you can add anything you want. Add all the things you would normally add to a scramble. Here are some ideas: onions, bell peppers, mushrooms, kale, etc.

Let's start cooking

  1. Start sautéing your onions and veggies until golden brown / softened
  2. Crumble the tofu into bite-sized pieces using a fork or your hands
  3. Add in all the spices
  4. Add some extra water if your scramble starts sticking to the pan, this also distributes the spices better
  5. Cook until the tofu is slightly browned
  6. Serve immediately or store in a fridge for the next day
