Omelet with Quinoa, Corn and Yellow Pepper

Hi guys! Here’s a recipe that I love, an omelet with quinoa, corn and yellow pepper. I make it for breakfast or lunch, it’s quick and simple and so nutritious! This is for one serving:

You will need 2 eggs, 1 tbsp quinoa, 1 tbsp canned corn, 1 tbsp yellow pepper (finely chopped), salt and pepper.

Boil the quinoa till it becomes fluffy, then drain. Mix the eggs, quinoa, corn, yellow pepper and salt. Heat a pan and drop a little oil in it. Pour the mixture and cook it for a few minutes until it hardens. I love to sprinkle a little pepper over it. Enjoy!

A Few Words About The Omelet Ingredients
– Eggs are very good for you to start with, they contain lots of protein and are perfect for breakfast or even lunch.

– Quinoa is a great substitute for bread, it’s also gluten free and can be used in many sweet or savory dishes. To cook it, use one part quinoa for two parts water. Bring to a boil, then leave it on low heat for about 15 min or until it becomes fluffy. Drain any excess water and fluff it with a fork. Store away the rest in an air-tight container, to be used in the next few days.

– I love the corn because it brings a sweet flavor to the omelet, and it enhances the sweet tones in quinoa as well.

– The yellow pepper is just delicious in my opinion, also sweeter than the red or green kinds, unifies the taste of the omelet.

– Pepper is great to balance the sweetness, especially for those who enjoy spicy food. I sprinkle it over the omelet at the end. You can omit it if you’d like, or replace it by the aromatic herbs of your choice (which you can put into the mixture at the beginning).
