In the art district of LA, there is an excellent Distillery Tour.
The tour takes 90 minutes and is unlike any distillery tour I have ever been on. First of you go on a boat inside this warehouse.
Lost Spirits is as much a technology company as they are a spirit maker. They have developed and patented and way to produce whisky with the signature of a 20 year old scotch, in 6 days... Just 6 days to age the scotch 20 years 9 (by taste)
On the tour, they go into great detail on how this is accomplished. Here's a hint, large powerful HID lights ageing the "barrel" wood.
