Winter just suddenly got real! The temperatures have dropped and the rain poured down and the best way to make it great again is to make a tasty soup.
My mom makes the tastiest soups. She’s a brilliant cook and knows how to make some really great food. I guess watching her has helped me to learn the basics over the years. These days I prefer baking but we still have a family to feed so I have to cook as well.
I experiment a little because I’ve got more time on my hands, so I decided to try out a potato and leek soup. I’m tired of vegetable soup and butternut soup is not my husband’s favourite, although I love it! So potato and leek it is.
##POTATO & LEEK SOUP
INGREDIENTS
6 leeks
6 medium potatoes
4 carrots
1 chicken stock cube
1 vegetable stock cube
1 packet white onion soup powder
1.5 L boiling water
2 Tbsp oil
METHOD
Chop the leeks, carrots and peel and chop the potatoes.
Gently fry the the leeks and carrots in the olive oil in a large pot for 5 minutes until the leeks begin to soften.
Add the potatoes, the boiling water and the 2 stock cubes.
Boil for 20 minutes.
Add the packet of white onion soup and allow to thicken for 5 minutes.
Joy! This is one yummy good old fashioned soup that the whole family will enjoy. I’ll be making it over and over again this winter.
