Greetings community, I have not published for a few days due to computer problems, so I was saving this recipe with all the good spirits to share it with you, it is a beet cake with dulce de leche, I know that generally people do not associate vegetables to sweet recipes, however, beets are a vegetable that is very sweet in addition to having an impressive color capable of pigmenting any other companion in the recipe, so I dared to prepare a cake with beets and additionally I added a beet cake with dulce de leche, beet is a vegetable that is very sweet besides having an impressive color capable of pigmenting any other ingredient in the recipe, so I dared to prepare a cake with beet and also added homemade dulce de leche, this resulted in a very good combination of flavors and here I share with you the step by step.

2 Huevos
1 taza de azúcar

1 cup sugar
2 tablespoons butter
1 tablespoon vanilla essence
2 cups leavening wheat flour
½ cup water
2 cups of water
4 tablespoons powdered milk
6 tablespoons of sugar
1 pinch of baking soda
Wash, peel and chop the raw beet into squares, add this to the blender, add 2 eggs and blend well, fresh beet is very hard so you have to pay attention that it is well blended.
In a bowl add the two tablespoons of butter and the cup of sugar, mix by hand with the help of a spoon or fork until the mixture is creamy and homogeneous. Add the vanilla and continue mixing.
Add the beet mixture and continue mixing, alternately add the flour by sifting it with a sieve and the half cup of water, mix until everything is integrated.
Grease and flour a baking pan, pour the mixture and bake in a preheated oven at maximum temperature for 25 minutes or until a toothpick comes out dry.
In a pot pour two cups of water, add 4 tablespoons of powdered milk, a pinch of baking soda and mix everything with a hand mixer until there are no lumps, bring to medium heat while stirring until the mixture changes color and consistency, the time may vary depending on the temperature of the kitchen, but the important thing is not to stop stirring because it can spill because the milk foams. When it is ready remove from the fire.
Unmold the cake when it is cold, cut the cake in half, I don't have a cutter so I use a sewing thread and the cut comes out perfect as long as you have firmness in your hands, as you can notice the red color of the beet is preserved on the outside surface of the cake while the center retains a very nice brown color, pour the dulce de leche on the cake and then put the top of the cake back in place.
Pour the rest of the dulce de leche over the top and if you like you can add colored sprinkles, this is optional.
As you can see it is a simple recipe with few ingredients, very tasty and nutritious, my grandson does not like vegetables but with this cake there were no problems, he ate the beets with pleasure.
