Eggplant season hasn't begun here yet but we can buy eggplants ripped in greenhouses. In a month I can prepare fresh eggplant salad from our garden. I am waiting for these days))
Let's begin to prepare the salad. First, we need to cut all vegetables in the way we like. Cut the eggplant and sprinkle with salt. To prevent the eggplant from turning black after cutting, it should be soaked in water or sprinkled with salt.
Then I chopped bell pepper and carrots. After chopping all the vegetables, they should be fried.
Make sure you fry the eggplants on medium-high heat and not low heat and place them on a kitchen paper towel to get rid of the excess oil. Bell pepper and carrots shouldn't be over-fried. Only 15-20 seconds is enough.
After that, we cut tomatoes, cucumbers, garlic, and our favorite greens. Garlic and eggplant like each other very much and are very tasty together))) At the end, add everything and add salt according to taste.
