Hello everyone. Welcome to my blog at this hour. Guess what? It's Fridayyyyyy. It's another Friday and of course the weekend is here. In my blog today I will be sharing with you a quick jollof spaghetti recipe or better locally referred to as concoction spaghetti by students and single men. LOL. The name concoction rice or spaghetti is popular in most Nigerian High school and College. Sit back, relax and enjoy all that I packaged for your reading pleasure.

Perhaps you are bored with your usual spaghetti and sauce and you want to try out something else like the jollof spaghetti or concoction spaghetti read this post till the end for an easy to prepare recipe that takes just few minutes to make and before you know it your breakfast, lunch or dinner is ready.

There are varieties of ways of preparing the jollof spaghetti. You could do with vegetables such as carrots, green beans, sweet corn etc but if you don't have it handy you can still enjoy your jollof spaghetti (just like me).

INGREDIENTS NEEDED FOR JOLLOF SPAGHETTI

Spaghetti

Pepper Sauce

Onion

Tomatoes

Vegetable Oil

Salt to taste

Curry powder, thyme and Stock cube

Indomie spice

Dry fish

Instructions on how to prepare

  • Wash and slice your onions, tomatoes, pepper and other vegetables. In my case I used an already grounded pepper that has been stored in my fridge.

  • Stir fry the onions and vegetables in the oil for about 2-3 minutes

  • Add seasonings such as curry and thyme

  • If you have meat or fish you add it at this time and let it cook for a few minutes

  • Set a pot with water on the stove, break your spaghetti into the boiling water

  • Cook for about 8-10 minutes, then take it off and drain the water

  • You may decide to add salt to your spaghetti while parboiling but be sure it's not too much due to the seasonings you've added to the stir fried vegetables

  • Mix the stir-fried vegetables with the spaghetti and allow to simmer for about 2 minutes.

  • Food is ready to be served and enjoyed.
