Hello everyone and happy Sunday. This is my first time posting in HL creative Sunday and today I will preparing ofe akwu also known as banga soup in yoruba language.
Ofe akwu is an igbo soup prepared with the oil extracted from palm fruit and can be taken with either rice or swallow of your choice but I prefer to take mine with rice while my hubby prefers swallow.
I will be taking you on a journey on how it is prepared. There are some ingredients I did not mention because I did not use them.
INGREDIENTS
Palm fruit
Onions
Maggi
Vegetables(ugwu and scent leaf)
Salt
Protein of your choice but I used dry fish and crayfish
Pepper
PROCEDURE
In a clean pot, put your palm fruit add water and put on fire, cook till done. When it's done you pound in a mortar, after pounding you remove from mortar and put it in a bowl, add water to enable you extract the oil which is used to cook.
After the oil has been extracted, you pour it in a pot and put on the fire. Once it has started boiling you add your grinded, blended or pounded crayfish and pepper and a little of your sliced onions then leave it to boil a bit.
After it has boiled a bit, you add your protein, the rest of your onions, Maggi and salt to taste. Let it cook for sometime then add the scent leaf and after five minutes you add your ugwu, let it cook for 2 to 3 minutes and your soup is ready to be served with either your swallow or rice.
