Traditional Dalmatian Soparnik
Soparnik is a cherished traditional dish from the Dalmatian region of Croatia, specifically originating from Poljica. Once a humble village meal, it carries the rich heritage of the hinterlands of Omi拧. This simple yet delicious pie features Swiss chard enrobed in a flaky, savory crust, cooked over coals for an authentic flavor that has delighted locals and visitors alike.

Ingredients

馃ガ 1 bunch Swiss chard, roughly chopped
馃 1 medium onion, finely chopped
馃尵 500g all-purpose flour Bob's Red Mill Organic All-Purpose Baking Flour
馃 4 cloves garlic, minced
馃珤 100ml extra virgin olive oil Filippo Berio Extra Virgin Olive Oil
馃 1 teaspoon sea salt
馃挦 250ml water


Instructions

1- Prepare the Dough:

  • In a large bowl, combine the flour and salt. Gradually add water, mixing until a soft dough forms.
  • Knead on a floured surface until smooth and elastic, about 10 minutes. Cover the dough with a damp cloth and let it rest for 30 minutes.

2- Prepare the Filling:

  • While the dough rests, prepare the filling. Heat 2 tablespoons of olive oil in a pan over medium heat.
  • Add the chopped onion and garlic, saut茅ing until translucent. Add the Swiss chard and cook until wilted.
  • Remove from heat and let the mixture cool.

3- Assemble the Soparnik:

  • Divide the dough into two equal parts. Roll each piece into a thin circle, about 40 cm in diameter. Place one piece on a well-floured baking sheet.
  • Spread the chard filling evenly over the dough, leaving a small border around the edges. Place the second dough sheet over the filling, sealing the edges by pinching or folding them together.

4- Cook the Soparnik:

  • If you have access to a traditional cooking hearth, cook the Soparnik over hot coals for about 20 minutes, placing live embers on top of it.
  • Alternatively, preheat your oven to 220掳C (428掳F) and bake on a pizza stone or baking tray for 15-20 minutes, or until the crust is golden and crispy.

5- Finish:

  • Once cooked, remove the Soparnik and brush the top with the remaining olive oil.
  • Traditionally, a handful of fresh ash is sprinkled on top for an authentic experience, although this can be omitted.
