Ingredients
🫘 1 can 400g/14oz California Garden Egyptian Recipe Fava Beans Ready to Eat
🫒 2-3 tablespoons olive oil
🧅 1 medium red onion diced
🧄 2-3 cloves garlic crushed
🌶️ 1 small capsicum diced mixture of green, red, and yellow
🍅 2 medium tomatoes diced
🌶️ 2 green chilies whole or halved
✨ 1/2 teaspoon turmeric powder
🌶️ 1 teaspoon Kashmiri chili powder
🌿 1/4 teaspoon cumin powder
🧂 1/2 - 1 teaspoon salt
🥄 2 1/2 tablespoons tahina sesame paste
🥚 3 large eggs
🍋 Juice of 1/2 a lemon
🌿 1/4 cup coriander leaves chopped
🧅 1/4 cup red onion diced
🌶️ A pinch of black pepper
Instructions
1- Sauté Vegetables:
- Heat 2-3 tablespoons of olive oil in a large frying pan over medium heat.
- Add the diced red onion and sauté until translucent.
- Add crushed garlic and sauté for another minute.
2- Build Flavor:
- Add diced capsicum and sauté for a few minutes.
- Stir in tomatoes and green chilies, allowing tomatoes to soften.
3- Season and Spice:
- Season with turmeric, Kashmiri chili powder, and cumin.
- Mix well, adjusting salt as needed.
4- Add Fava Beans:
- Stir in the canned fava beans with liquid.
- Mash beans with a potato masher until desired consistency is achieved.
5- Incorporate Tahina:
- Stir in tahina until well combined.
6- Cook Eggs:
- Create three wells in the mixture.
- Add a small amount of oil to each well, crack in the eggs, and sprinkle with salt and black pepper.
- Cook until egg whites are set.
7- Finish with Lemon:
- Drizzle lemon juice over the dish.
8- Garnish and Serve:
- Garnish with coriander leaves and diced red onion.
- Serve warm with Arabic bread.
