Traditional Colombian Bandeja Paisa
Bandeja Paisa is a quintessential Colombian dish hailing from the Antioquia region, renowned for its hearty and abundant combination of flavors. This dish is a gastronomic experience where a variety of ingredients meet to create a satisfying and rich meal that celebrates the traditions of Colombian cuisine.
Ingredients
🫘 Frijoles: Soaked overnight
🍌 Plátano Maduro: 1, sliced and fried
🍌 Plátano Verde: 1, diced into cubes for beans
🥚 Huevo: 1 per serving, fried
🥑 Aguacate: 1, sliced per serving
🥓 Chicharrón: 200g
🌭 Chorizo: 1 per serving
🧅 Cebolla: 1, diced for sofrito and ground meat
🍅 Tomate: 1, diced for sofrito and ground meat
🌶️ Pimentón: 1, diced for sofrito and ground meat
🥬 Apio: 1 stalk, diced for sofrito
🧄 Ajo: 4 cloves, minced for sofrito and ground meat
🟠 Color: 1 teaspoon
🫒 Aceite: 2 tablespoons, for sofrito, frying, and ground meat preparation
🥩 Carne Molida: 500g
🧂 Maggi cube: 1
🧅 Cebolla larga: 2 stalks, for ground meat
🧂 Sal: 1 teaspoon, for ground meat
🍚 Arroz: 2 cups, cooked normally
🥯 Arepa: 1 per serving
Instructions
1- Prepare Sofrito for Beans:
- Finely chop onion, tomato, bell pepper, celery, and garlic.
- Heat oil in a pressure cooker and sauté chopped onion, tomato, and garlic until softened.
- Add chopped bell pepper and celery.
- Stir in a pinch of achiote powder and mix well.
- Add water to the sofrito to create a flavorful base.
2- Cook the Beans:
- Add pre-soaked and washed beans to the sofrito in the pressure cooker.
- Add diced green plantain cubes.
- Stir in a Maggi cube and mix well.
- Secure the lid on the pressure cooker and cook for 25 to 30 minutes.
3- Prepare the Ground Meat:
- Chop remaining onion, bell pepper, garlic, and green onions.
- In a frying pan, add ground meat and chopped vegetables.
- Sprinkle achiote powder, add a bit of salt, and a splash of oil.
- Sauté, breaking up the meat until cooked through. Add water to deglaze and continue cooking until flavors meld.
4- Prepare Remaining Components:
- Cook white rice according to package instructions.
- Fry ripe plantain slices until golden brown.
- Cook chicharrón until crispy.
- Cook chorizo until done.
- Fry eggs sunny-side up.
- Heat arepas.
5- Assemble the Bandeja Paisa:
- On a large serving plate, place a portion of cooked rice.
- Add a generous serving of cooked beans on the side.
- Place a portion of the prepared ground meat.
- Arrange fried plantain slices around the plate.
- Add cooked chicharrón and chorizo.
- Add a fresh arepa next to the components.
- Place a fried egg on top.
- Garnish with a slice of avocado.
