Ingredients

馃珮 2 cups seasoned red beans
馃 3 to 4 cups mozzarella cheese, shredded
馃尳 4 cups Maseca corn flour
馃挧 3 1/2 to 4 cups water
馃 1 tsp salt
馃珯 1 1/2 cups water mixed with 2 to 3 tablespoons vegetable oil for hands


Instructions

1- Prepare the Dough:

  • In a large mixing bowl, combine the Maseca corn flour with 1 tsp of salt.
  • Gradually add 3 1/2 to 4 cups of water, kneading until you achieve a smooth and soft masa dough.
  • Ensure it is pliable and not sticky, and cover the bowl with a damp cloth.

2- Prepare the Filling:

  • In a medium bowl, mix the seasoned red beans with the shredded mozzarella cheese until well combined.
  • Taste and adjust seasoning if necessary.

3- Form the Pupusas:

  • Lightly oil your hands using the water and oil mixture to prevent sticking.
  • Take a golf ball-sized portion of dough, flatten it into a disk, and create an indentation in the center.
  • Add a spoonful of the bean and cheese mixture, then carefully encase the filling by pinching the edges together, reforming it into a disk.

4- Cook the Pupusas:

  • Heat a Lodge Cast Iron Skillet over medium heat.
  • Place the shaped pupusas onto the skillet.
  • Cook each side for about 3 to 4 minutes, or until golden brown and cooked through.

5- Serve and Enjoy:

  • Serve hot pupusas with curtido and salsa roja for an authentic experience.
