Yesterday, I noticed that our main cassava plant was leaning about 45° to one side. Right about the same time that hurricane Harvey was going on in Texas, we got some pretty rough winds and flooding in our area (nothing compared to what they got hammered with). The winds were so high that they actually knocked over my chaya, (a.k.a. tree spinach) and this big cassava plant that I had. I decided that if I didn't harvest it I would likely lose the roots to rot.
Cassava is a root vegetable/tuber similar to the potato. It's grown all throughout the tropics as a major staple. Tapioca comes from cassava, as well as many other dishes.
Make sure to check back in an hour or so to see the meal that we prepared from the cassava I harvested!
And as always, thanks for stopping by!
