¡Hola hivers! 💜

Hi hivers! 💜

I can't end this Sunday without leaving you another one of my favorite recipes. The yucca cake I tried it for the first time here in Colombia, it is a traditional fried food that you can get in any fast food cart and even in local places.

I met a girl from the coast and she told me more or less how the process works, the filling is the least important thing because you can put almost anything, so I always vary on that part. I opted some time ago to make several attempts at home but they turned out badly.

The most important thing for this recipe is that the yucca literally comes out a little hard, I know it sounds strange but it is the best way to make the cakes compact and not to dull the flavor of the yucca by adding too much flour. This time I made it because the yucca didn't turn out so good so I got the consistency I wanted.

Although it takes its own process, it is something that is very enjoyable with the right result, taking advantage of the mess that is the weekend, a good time to indulge ourselves. Here I will show you in the simplest way the ingredients I used and a detailed step by step for you to enjoy this delight 😍.

IngredientsQuantity
Yucca1 kilo and 1/2
Chicken breast½ unit
Eggs3 units
Fresh peas½ cup
Onion1 branch
Tomato1 unit
Precooked rice¾ cup
Wheat flour1 tablespoon
Salt and pepper1 pinch
Seasoning and garlic powderto taste

Procedure

Step 1.-Cook the yucca in the pressure cooker with just a little salt, as soon as it starts to whistle, count 8 to 10 minutes, then remove all the air and uncover to cool completely. At the same time cook the breast in enough water with a little salt, garlic powder and a piece of onion, when it starts to boil add the peas and leave it for 15 minutes more until everything is well cooked. We also put to cook the eggs about 15 minutes after the water has boiled, once ready they are chopped into medium slices.

Step 2.- In the meantime we prepare the stew for the chicken. We wash the vegetables well, chop the onion very small and the tomato is grated. We put this in a pan with a drizzle of oil and salt, after about 3 minutes add pepper, seasoning and marinade, stir and leave another 5 minutes. Finally add the shredded breast, mixing everything very well so that it absorbs all these flavors, let it cool and ready.

Step 3.- Once the yucca is ready we have to grate it to make the dough process easier, add the spoonful of wheat flour and a pinch of salt. We wash our hands well and knead adding water a little at a time while kneading, so we make sure it is not too soft.

Step 4.- For the assembly we join the chicken, the peas and the pre-cooked rice very well. We clean our hands very well once again and take a medium dough ball, we flatten it as if it were an arepa but not so round, right there we add the filling and a slice of egg, we close the cake well with great care that there are no spaces so that it fills with oil in the center. The trick to finish the assembly is to wrap the cake in a plastic bag and press it so that all the air comes out, so we will not have problems when frying. Finally I made a kind of oval shape and put it in the oil over medium heat, turning it over so that it is equally browned on all sides, as much as possible.

Once ready, all that's left is to enjoy! I loved the result because I had never been so crispy and tasty.

Some recommendations

*The rice in the filling is totally optional, it is something of culture in this country (in some regions), you can also put ground beef or shredded meat.

*When frying I recommend that the fire be between medium and low, at the same time to be attentive at the time of frying, I used 2 forks to make it easier since they are heavy and we do not want to suffer burns.

I really enjoyed this recipe, I will not deny that it took me some time but I am glad that just when I decided to make them to publish them here they turned out so perfect and delicious. It was worth the time and effort, try it at home 🙏

Thank you so much for reading me!!!, for your support and attention 💜
