Hello Foodies and Pizza People,
Here's a recipe for roasted pumpkin seeds. A little late to the post, I should have done it sooner, but realized after carving a spooky pumpkin for the Hive Pizza Community Pumpkin Carving Contest and making some that we remembered actually how good they really are.
We went to a local farm who had left over pumpkins from Halloween today, (gotta get 'em before they get mulched) and offered to take the broken, slightly mushy, not the prettiest ones off his hands. We got quite the haul.
(
Laid down a sheet of plastic and started carving and digging through the innards, much easier when you can carve it open in half. Sorting through and just taking the seeds. Than a rinse in a bucket.
Strained and pulled out the last bits of orange pumpkin flesh, we left a few bits to roast on and have a great pumpkin flavour.
Laying them out on a baking sheet, sprinkled with salt and roasted at 400C for 20-40mins. Depending on how crowded the baking sheet is, time varies. Be sure to flip them a couple times too.
Roasted and delicious! We made a couple batches, well more than a couple, some roasted more than others to mix all together.
