Hello fellow foodies. Happy new year wanted to blog about the new year's recipe dinner but there wasn't time to take pictures and all. Nevertheless, it feels good to be back blogging about what I love doing best cooking. Cooking is one of the best way of relieving my stress. It completely understands you that's why it is said that your cooking reflects your emotions. So with enough happiness in my heart, I decided to enter the kitchen yesterday and do what I like.
Since I have been shouting in the hose since last year that I'd do moi moi and I guess woke up everyone's cravings for it, they were constantly on my neck on when will I fulfill my promise. So I did yesterday.
What is Moi Moi.
I seriously don't know how people sit down to think of something like this. but whoever did this creation, you are blessed. Moi Moi is a Nigeria based delicacy from a mixture of peeled black-eyed peas, peppers, onions, and other and seasoning. It is not religion based or specific to one tribe. I guess it's a free gift to all.
Things needed.
- Beans
- Onions
- Pepper (tatashe and rodo)
- Crayfish
- Groundnut Oil.
- Seasoning cube.
- Salt.
- Egg/ sardines (optional).
Preparations/Cooking.
Wash the beans.
The biggest task in cooking moi moi is the washing of the beans. This is what makes cooking this dish a difficult thing for most people. After washing the beans, the rest is quite a breeze. Let me explain washing the beans. It involves removing the brown front cover exposing the inner white skin. It might seem easy by just saying, but trust me, it isn't.Wash the peppers.
Slice the onions.
- If you are using eggs, now is the time to boil the eggs preferably while washing the beans.
When done, you take the washed beans, sliced onions, and Peppers to grind. If you are in Nigeria, tell the person that it's for moi moi. In other countries, I don't know if you have this but an alternative is using your home blender I guess.
Ones you are done grinding, now is the time to use the other ingredients. In a bowl that can contain the grinded beans, add your crayfish, salt, seasoning, and groundnut oil and mix well. Feel free to adjust till you get desired taste. If you are using sardines, add it to the mix.
Now, you should have a sweet mix of pudding. Portion in a heat safe container. Here I used small plastics and white nylons. Alternatively, you can use a tin of milk, Banana leaves, aluminum foil Pans or baking pans.
After portioning, if you are using eggs then add the boiled boiled eggs into each portion. Place the in a large pot and steam till the pudding becomes hardened.
Note
- If using tin or baking pans, remember to oil the inside.
- To see if done, insert a toothpick in the pudding.
- Avoid using tomatoes because it makes the pudding difficult to solidify.
- Be careful with the salt.
- Don't just leave it to cook. Constantly check the water.
Serving
This can be eaten in the morning, afternoon or evening. No specific timing.
It can be served with:
- Custard.
- Pap.
- Garri (my favorite)
- Bread. Yeah bread. A friend of mine introduced this combo to me in school and it was amazing. Feels the stomach well. Highly recommended for students lolz.
So there you have it guys. My moi moi recipe is not different from the usual but it's how I was taught. I saw a post on a lady from another country prepared fried rice and now I'm having cravings for fried rice till I get back to school though.
