It was a sunday morning. My oh my. What a busy day was yesterday. I said to myself, reminiscing what had transpired the day before.

Yesterday was my hometowns' annual fiesta. As usual we went there. Met some relatives. Had a few drinks coupled with good food. Roasted pig, shanghai rolls, and some scallops.It was amazing to say the least. Had a good time. Of course.

So waking up on a sunday morning was chore. Indeed.I had a few drinks the day before. The hangover starts to kick in. As I get myself out of bed I was wondering what to eat for breakfast.

My mind was still foggy. From sleep. Then suddenly I had an idea. A brilliant idea.Why not make a sandwich for breakfast? Okay, time to make one.

I had just remembered I had a sourdough bread. Perfect. A sourdough bread is a mix of yeast, and lactic acid bacteria. This type of bread is rich in nutrients, and less likely to spike your blood sugar. Perfect for those who have diabetes. I started to prepared the ingredients. Eggs, pepper, butter some salt and a piece of lovely butter. Do you want to know how to prepare this?

Heres how...

1.First I whisked some eggs. Whisked them good until they blend perfectly.

2.Then added some decent amount of salt. I use a special kind of salt which is sea salt. Sea salt has more nutrients and preserves the flavor.
3.Then some pepper. For aromatics.

4.I heated the pan. Heat it until the smoke starts to appear.

5.Added some butter. I use butter because it enhances the flavor of the eggs. Makes it silky smooth.

6.Fry the eggs. Cook them in medium heat.

7.Then I sliced the sourdough bread evenly. In equal parts.

8.Put some mayo on it. For taste. Or if you prefer you can use melted butter. Whatever suits your taste.

9.After the eggs were done, let it rest for a few minutes.

10.I picked up a slice of the bread with mayo on it.
11.Then proceeded to put some scrambled eggs. Add more if desired.
