Pancakes Delight 🥞 Mother's Day 2022 #DashOutSunday

Last Sunday was Mother's day and I've been cracking my head what to give my mom and it wasn't until Friday that it hit me: pancakes! My mom has been asking me for some time when I will be baking her pancakes. So even though I was late with my planning, I luckily had most ingredients at home.

I knew I had enough all purpose flour, eggs and butter, so Saturday I only had to go and buy some milk and vanilla extract. Sunday morning, I wanted to wake up earlier than usual, but alas it didn't go as planned.

Not to fret though, as I had plenty of time to prepare and bake because some other plans were canceled and though sifting is a tedious task, I've learned that it's a must to minimize clumping and to ensure that the pancakes come out fluffy.

After having the dried ingredients mixed, in went the wet ingredients like eggs, milk and the vanilla extract. Eggs could of course be substituted, but be sure to use an ingredient that helps with binding like bananas for example.

Then I added in some sugar and salt to taste and proceeded to "whisk" the ingredients, with my self-made blending tool. Since we've moved in, we didn't find the need for a whisk, because we didn't think of using one that often. But for using almost one (1) kg. of flour, I had to be resourceful and put two forks together. It worked extraordinary well.

I also added some drops of melted butter in the batter, before it went into the frying pans. From experience I used two, to save on time and spare my energy and patience. After tasting the trial pancake, that usually gets "thrown" away - not in my kitchen though - I realized the butter was salted and that I had to balance it off in the batter.

Though I've tried to flip pancakes in the past - like in the movies - I used a spatula this time because this wasn't the day to practice my skills.

After I was done, I rolled the pancakes and placed them in a plastic container.

When I handed my mother the pancakes, she first thought that I had bought the rolls, because of the sticker on the lid. She was overjoyed when I told her I made them myself and said that she appreciates them even more and asked if I could do this more often.

Looking back, it was an eventful day, with - again - good food and the family cracking quite some jokes in between. And while I was preparing the batter, I had that nagging feeling I was forgetting something and then rarej@rarej reminded me afterwards that I forgot to put cinnamon powder in the batter for that extra kick. Oh well, next time then as I was out of practice.
