I made mayonnaise from fresh eggs and a lot of oil, an unhealthy variant. However, I tried making it with hard-boiled eggs and loved it. I boiled 3 eggs, added the juice of half a lemon, a little salt and sugar, pepper, half a pinch of oil and a teaspoon of mustard to the blender. Beaten. This is a healthier version.
