Last Peppers Picked & Processed - Garden is Done! - by Sunscape
The peppers are the last to be harvested from the garden. I try to let them stay on the plants until they start to change color, but these were what was left so I picked them.
I'm out of room in my freezer where I usually keep the peppers. This batch I chopped and dehydrated instead.
I got a quart once they were dry. They will be good for quite some time that way.
These were done the week before. They were chopped and placed onto the baking tray to freeze.
The following day, I vacuum-sealed them for the freezer. I have about 14 quart bags full of chopped peppers from this season. That should be plenty until next year.
The last of the Jalapeno's were ready too. I use the largest ones to make jalapeno poppers and freeze those as well.
I really like the yellow and orange peppers, but the green do well too, since they are not as hot.
A simple cream cheese and cheddar makes up the filling then frozen. Earlier in the month I did some wrapped in bacon, my favorite way.
Sealed and ready for the freezer to be enjoyed over the winter months for an appetizer.
I had way more Jalapeno than I could use, so they were gifted to a friend.
The green tomatoes finally ripened enough to roast in the oven for a batch of sauce. Thank goodness, I was over cooking down tomatoes for the past month and a half. lol
Lastly, onions! I had too many onions and decided to chop them while I was at it.
I ended up with 4 quart bags. They were not going to make it for long term storage and at least I will have them preserved for recipes. They are in the freezer too!
Now that all the produce has been processed my freezer is stuffed, not another item can fit in it. Not a bad thing to be sure. This year's garden was outstanding!
This week I should be finished canning a few more meals for the pantry, and the canner will be put away until next year. Whoohoo!
