For some people, Sunday is the day to run around and finish everything they failed to finish during the previous week. Others spend the day in more spiritual pursuits. In our house, Sunday is the day the kids grumble about returning to school, and we self-employed adults plan for a work week without kid-in-the-office interruptions. Sunday is also the day I usually cook the largest dinner (with an eye toward leftovers), but today I opted for a quick and easy meal of chicken fried rice and spring rolls.
