Kadhi is a north Indian specialty made using gram flour and sour curd. It’s a treasured recipe by my mom and is very delicious. Like no one one can eat just one, haha. It is eaten with onion fritters that are dipped inside it. It has a spicy, tangy taste and is served with boiled rice or pooris.
There are 2 keys to a nice kadhi recipe.
- It must be prepared using sour curd. The tanginess of the sour curd is what gives it a great taste.
- It must be prepared on low flame and must be allowed to cook for a longer time, atleast an hour.
There are a variety of kadhi recipes from different parts of India itself. Some people like it sweet (Gujarati Kadhi), some make it with a lot of vegetables, then there is sindhi kadhi. All are good but this Punjabi version is my favorite.

Ingredients

| 6. | Fenugreek seeds | 1/2 TBSP |
| 7. | Cumin Seeds | 1/2 TBSP |
| 8. | Dry Red Chilli | 2 Units |
| 9. | Mustard Oil | 4 TBSP |
| 10. | Salt | To Taste |
| 11. | Turmeric Powder | 1 TBSP |
| 12. | Red Chilli Powder | 1 TBSP |
| 13. | Garam Masala | 1 TBSP |
Method
Step 1: Take a large bowl. Add curd, gram flour, salt, red chilli powder, turmeric powder and garam masala. Blend it well using a hand blender or a whisker. No lumps should be seen.
Step 2: Heat 2 TBSP oil in a pan. Add cumin seeds, Fenugreek seeds, chopped onion. Saute until onions turn golden brown.
Step 3: Now add chopped ginger and chopped garlic. Saute for 2 minutes.
Step 4: Now add the curd and gram flour slurry prepared above along with 5 cups of water.
Step 5: Let it come to a boil on a high flame and then lower the flame and let it cook. Don’t cover the pan. Keep stirring every 15 minutes.
Step 6: Once the slurry thickens nicely, in a separate pan, add 2 TBSP mustard oil and whole red chilies. Once they turn blackish-brown, add them to the kadhi turn off the flame.
Serve the kadhi with onion fritters, rice, or pooris on a cold/rainy day. On a warm day, you might not get the urge to eat a lot of gram flour so prefer making it on a colder day.
