This is again from the archive. It was one of those days when I visited my friends azhardesk@azhardesk , who live in a rented one room appartment in New Delhi. He is Muslim by religion which made him expertise of cooking non- veg dishes. That day he made Spicy Mutton for 3 of us during the weekend.

I didn't took the entire picture, but I remeber how he manages to cook quickly. Still I try to explain the step by step process with whatever images I have. He arranged following ingredients and started cooking :

  • Fresh Mutton from Market
  • Cut Onion
  • Turmeric Powder
  • Ginger and Garlic paste
  • Green chillies
  • Meat Masala
  • Mustard Oil
  • Salt to taste

Firstly, he washed the brought mutton into a warm water. He did that to clean mutton properly.

After that he put, ***Onion,Turmeric Powder, Oil, Salt, Ginger Garlic paste into the raw mutton and started mixing them properly with hand.

It took him 10 minutes to , mix all the stuff properly. After that, he put te mutton and tye entire mixture into a pressure cooker to boil. He said, mutton are hard to digest, so boiling them help them soft and helped in faster digestion.

He let it boil for 15 minutes in low flame. In the meantime, he started prepairing stuffs for further steps to roast the mutton properly. For that he took few chopped Onion, Tomatoes

On the another gas burner, he put a bigger Kadhai to roast the mutton. Put some Oil, added Hing & Bay leaf to it. Let the oil to get heat. And then started frying onion and tomatoes onto it.

After 15 minutes of boiling mutton, he emptied the cooker on the Kadhai, and started roasting it quickly.

Soon the entire room was filled with a different aroma. I was experiencing it first time. While roasting and frying mutton, he added Meat Masala powder brought from market. He kept steering continouslly the mutton untill it turn into brownish.

Soon the raw mutton took a spivy look, as the water spilled from onion and mutton get into a groovy dry gravy and it was looking quite delicious.

I am not a non-veg lover, but on azhardesk@azhardesk request I did tasted a piece alongwith the gravy. It was spicy no doubt, the gravy tastes much better, not sure about the mutton pieces I never had it before.

In this quest,I did learn the Indian way of cooking red meat. By sharing here now I share my knowledge with everyone and thereby refreshing my memory with non- veg cooking.
