I am from Eastern part of Nigeria, Obollo Eke in Udenu Local Government Area Enugu State. We have many natural delicacies permit me to write them in my natural language that's the only way I know it's called hehe it include agaharara ji,agharara oka,achicha ede and many others.
AGHARARA JI
I will give recipes and how to cook one of my natural delicacy which is agharara JI.

INGREDIENTS

Half paint of Fio-fio(pigeon peas)
One tuber of ji(yam)
Salt to taste
2 to three cubes of Maggi
Pepper to taste
50cl of Palm oil
Ukpaka/ugba(African Oil bean)
2 medium sized Onions
Uziza also called Ashanti pepper (piper guineense in English and iyere in Yoruba to taste

PROCEDURES

  • Cook your pigeon beans for up to 3_4hours till it's done very well.

  • Peel your yam and add in the pigeon beans
  • When the yam is done remove the yam from the pigeon beans and put the pigeon beans in a sieve to drain.
    Cut the yam in desired shapes it can be small or big depending on your choice.

  • Make the sauce by:
    Putting a clean pot on the fire either charcoal fire,stove or gas.
    Add your oil.
    Add your sliced onion and African Oil bean
    Add your pepper,
    Add your grinded uziza,
    Add your maggi,
    Add salt to taste,
    Add about half litre of water

  • Put your pigeon beans in a clean pot and add the sauce.
  • Use your turning stick and turn the pigeon beans and yam very well.

*Put the agharara ji in fire for about 2_3 minutes.
Your sweet agharara ji is ready to serve and enjoy.
