Venezuela is a tropical country, where there is no marked seasonal change, there is only a rainy period and a dry period. We are currently in the rainy season, but that does not prevent it from being very hot, especially where I live, which is the Venezuelan plain, so refreshing drinks are very necessary. And since the Ecency Discord Topic deals with these drinks to make the heat more bearable, here I bring a juice that I usually consume very cold, even frosty, or with a lot of ice, and it is TAMARIND JUICE . With that said, let's get to the recipe!

On my lot I have a huge tamarind tree. I think it reaches 20 meters in height, and the fruits are concentrated in the crown, so it is very difficult for me to reach them. These fruits are left for the parrots and macaws that visit my plot, who are regular diners on this tree. Sometimes, when this tree is very full of fruit, flocks of parrots arrive (there are dozens of parrots), eat, trip over some fruits that fall to the ground and I pick them up; however, this month there are not many fruits, so I bought already peeled tamarinds, which come in a plastic bag, it is a handmade product, and they are the ones I used in this drink.

THE RECIPE / LA RECETA

Time, ingredients and equipment

  • Preparation time: This is a very simple recipe, which only requires some patience since the tamarind must be boiled, especially if we have not harvested it directly from the branches of the tree, thus avoiding contamination with bacteria or parasites. And if we use piloncillo or papelón we must also boil it for the same reason, so taking this into account, we will require between 15 or 20 minutes to prepare it.

  • Servings: 2 liters of tamarind juice.

  • 1900 ml of drinking water.

  • 185 grams of peeled tamarinds.

  • 200 grams of piloncillo. You can also use sugar or the sweetener of your choice, and to your liking.

  • Ice cubes (optional).

  • Jug, manual whisk, strainer, teaspoon, pot, glasses, etc.

Tiempo, ingredientes y equipo

  • Jarra, batidor manual, colador, cucharilla, olla, vasos, etc.

THE PROCEDURE / EL PROCESO

The first thing we will do is boil the already peeled tamarinds in 500 ml of water. As I already mentioned, this is very important to eliminate any microbes or parasites. If you are absolutely certain that the tamarinds have not fallen on the ground, you can peel and soak them, but it is always good to boil them to loosen the pulp.

At the same time, we chop and bring to a boil in 200 ml of water, the piloncillo or papelón (cane sugar), until it melts and boils for 5 minutes.

Once the tamarind is boiled, we take it to a jug, and mix with 500 ml more of water. We proceed to use the manual whisk to detach the pulp from the seeds. I recommend not using the blender, because the blade suffers and the seeds give off a not very pleasant flavor. After vigorously beating, strain and repeat the procedure with the rest of the water, to strain once more.

Then add the strained piloncillo. The amount you add is your choice, I used 200 grams of a beautiful honey-colored papelón, very sweet, not bitter at all. Then mix well, put it in the fridge to cool, or serve it with a lot of ice, just like I did, and the delicious and refreshing tamarind juice is ready, ideal for summer, and: Cheers!
