A Hot pot meal is simply a hot pot of boiling broth, and you throw in whatever ingredients that fancies you... and you cook them to your liking. Chicken soup as a starting broth is always good
You can have a dipping sauce (spicy or otherwise) to augment the tastes of your ingredients.

Boneless sliced fish
We use a potable induction cooker such as this one
Put the cooking pot with the broth on top and we are ready to go
Throw in whatever ingredients that takes time to cook
wait for the hotpot to boil up and cook the ingredients. If you have beef slices, you may not want to over cook the beef, so you just dip the slices in the boiling broth for a couple of seconds to get it cook to medium rare and you are good to eat 'em
