Evening everyone.....

As most of you know a very good friend of mine passed away last Saturday night. The viewing services were Thursday and the funeral was on Friday.

My friend was a painting contractor, and we found out the day of the funeral that he didn’t have life insurance.

Last minute on Friday night a bunch of his close friends decided we were going to hold a benefit luncheon for him to raise money to help offset the costs.

One of the guys was able to get a Knights of Columbus hall for us free of charge, with access to the kitchen. Once we had a place together we came up with a time of 2pm-4pm.

The word spread quick through text, Facebook, Twitter and whatever else they were using. Before we decided on a menu, we had already sold 52 tickets at $25 per ticket.

I volunteered to cook, and a friend Rick did as well. We decided on doing Ken’s favorite foods. So the menu was Caesar salad with homemade dressing. Penne vodka (real authentic vodka sauce, with pancetta and onion). And sausage, peppers, onions with potatoes.

Steve got a bakery to donate 20 loaves of Italian bread which we turned half into cheesy garlic bread.

I made 16 quarts of homemade marinara sauce Saturday as the base to the vodka sauce. Rick and I met up last night and did 4 full trays of sausage peppers, onions and potatoes.

We made 20 pounds of penne in 5 pound batches to keep it fresh. Making the sauce for each batch as it was cooking.

The turnout was AMAZING.....

We sold over 140 tickets, took in an additional $1400 in straight donations. And Rick write a check at the end for 5K. So we managed to give Eileen $10,000 to help out.

At the end of the luncheon there was only a small amount of food left. Maybe enough to feed three or four people.
