Hello beautiful foodies! Adding okra in our diet is very beneficial to our health. It is one of my favourite veggie, last week I was able to share my okra in yoghurt curry, today I am going to share another way cooking okra, okra masala so let's get started.
Choose small & young okra, as they are soft & tastier than the bigger ones.
For marination:
Baby okra 200grms
Coriander seeds 1/2 tbspn. Coarsely grind
Fennel seeds 1/2 tspn coarsely grind
Cumin seed 1/4tspn coarse
Kashmir chili powder 1/2 tbspn
Garam masala powder 1/4 tspn
Besan gram flour 1/4 cup
Salt
Tomatoes 2big. (Pureed)
Onion 1 big
Ginger garlic paste 1tbspn
Cumin seed 1/4 tspn
Curry leaves 1sprig
Chili powder 1/2 tspn
Coriander powder 1 tbspn
Garam masala 1/4 tspn
Sugar a dash( to balance sourness from tomatoes)
Prepare all necessary ingredients:
Cut okra into halves ( lengthwise)
Coat okra with spices under marination.
Heat oil in a pan, splutter cumin seeds, curry leaves & onions saute till brown in colour.
Add in ginger garlic paste. Saute till raw smell is gone. Low flame.
Pour in tomato puree, cook till tomato puree is reduced. Occasionally stir. Approx.15 min.
The tomatoes are nicely cooked.
Add in chili, coriander, garam masala & salt powder. Give it a mix.
Add in 2 cups of water. Put to lid. Simmer for 10 Min. Till water is reduced.
Add in sugar to balance the sourness from tomato.
Transfer to bowl. Cool it down.
Meanwhile, in the same pan, heat oil , fry marinated okra, under low fire.
Add fried okra to curry/ sauce
