Adobo is a popular dish in the Philippine cuisine. It is marinated in Soy sauce, vinegar, bay leaves and black pepper. You can make adobo dishes with meat such as chicken, pork, beef, seafood and certain vegetables.
There are many variations in cooking this iconic dish but even then, They were all tasty with a sweet and salty taste.
And for this I would like to share my version.
Ingredients
Chicken, medium cut
Soy sauce, ½ cup
Vinegar, ¼ cup
Bay leaves
Black pepper
Potato, quartered
Sugar, ½ tsp (optional)
Preparations
- Marinate the meat by combining the soy sauce, vinegar, bay leaves and black pepper for a few hours.
In a preheated pan, Add oil and brown the chicken for a couple of minutes.
Add the liquid from the marination and cover with lid. Let it boil for a few minutes.
Add the potatoes and simmer for 30 minutes.
Adjust your seasoning, you can also add ½ teaspoon of sugar and Garnish with boiled egg and serve.
Best with plain rice.
Note that this dish gets more flavorful by the day because of the marination. The sugar will balance the taste from the acidity of the vinegar. Marinate the meat not more than 12 hours, otherwise it will be too salty when cooked.
I hope you like it.
Thank you for coming. Have a wonderful day!
