Quesadillas are my favourite when it comes to snacks. They can also very well double up as meals. While prefer my Quesadillas nice and healthy you could also modify them to be tasty. Its all a matter of how you manage the dough and the fillings inside. I use multi-grain dough and lots of vegetables. I use minimal cheese, try and keep my dishes healthy and tasty.Do note given the lockdown i am beginning to run short of supplies so i tend to use other items to compensate. While doing so i will also mention the ideal ingredient that can be used in normal times.
You could also use meat or egg inside. If making tortillas at home proves to be a bit much, then one can always pick readymade ones from the supermarket. In my recipe today I have used cheese slices. Ideally one should be using freshly grated cheddar cheese. That is because a lot of the items are off-shelf owing to the current lockdown.
One can also try the folded method to make Quesadillas I did a couple like the pic on top, but I just kinda like the idea of one whole big circle like a cake!
I prefer to cook my Quesadillas as a whole circle. I flip it to a plate from the pan and flip the other side back on to the plan. Since I was using sliced cheese instead of cheddar the final output was a little gooey inside. So I used a knife with serrated edges to cut it. Also if you want to enhance the taste you can use some ghee ( clarified butter) to the outside of the tortilla. This will fry it nice and brown.
Ingredients for 1 Quesadilla
1 Cup multi-grain wheat flour and 1/2 cup refined flour.
Salt to taste.
2 cups water.
½ cup freshly grated cheddar cheese/ 2 sliced cheese.
1/2 cup bell pepper finely chopped.
1/2 cup capsicum finely chopped
4-5 chopped olives.
15-20 grains of boiled corn.
10 small chunks of cottage cheese.
1/2 onion finely chopped.
1 teaspoon olive oil or ghee.
The Recipe
Knead the dough with the multi-grain and refiner flour. Add water and salt as needed.
Put a few drops of oil on the dough and get it a little oily on the surface. Set aside.
Heat a pan with a tsp of oil/ghee.
I tend to add some Indian spices like cumin/mustard etc you can skip this part if you wish.
Add the onion and fry till its glazed.
Add the vegetables and sauté them till they are nice and done.
Add the cottage cheese, sauté for a minute.
Add salt to taste. Mix well . Set aside.
Now take the tortilla dough and flatten them into pancake shape.
Put one on a hot pan, and heat one side (outside) a little well and leave the other side (inside) a little less done.
Now fill the inside with the veggies mix.
Put two cheese slices on top. This is just a lockdown recommendation in case you don't have cheddar.
Put the other tortilla on top. Put some cheese strips cut from slices around the edges of tortillas.
Heat a pan, add some ghee. Once heated make the flame low.
Put the tortilla combination on the pan.
Let it cook for a while. Make sure the tortilla does not burn. We jut need enough time for the cheese to melt.
Once done. Gently slip the tortillas on to a plate. Flip it using another plate and inverting it, then slide back on to the pan.
Once done nice and crispy slide on to a plate and cut.
You can serve this with Hari Chatni (Mint Chutney) or Imli chutney if you like an Indian flavour. You can also try various other dips ranging from Italian to Mediterranean with this dish.
This is a very versatile meal. Different cultures can impart different flavours to the fillings. A dish that be the same and yet be different.
