It’s been a while since the last time that I posted .Have you tried eating a traditional delicacy which you enjoyed eating and you keep craving for it? Well , for today’s blog let me share with you all one of the traditional Filipino rice cakes known as BIBINGKA. This food is very yummy and mostly eaten with coffee in the morning or a merienda at 3pm.This food is very well known in the Philippines and is often sold by vendors.

I wake up early in the morning to go to the local market, after saying my morning prayer I drink my one glass of warm water, take my pill and prepare to leave. It was six in the morning when I left home. When I arrived at the local market, I parked my Scooter in the motorbike designated parking area. After buying what is in my list like fishes, vegetables and spices. I remembered I needed to buy a new Broom stick to use outside sweeping. So I asked a local where I could buy it? He told me that it is a five minutes walking distance from the local market. So I have decided that I would just ride Blaze my Scooter to reach there.Suddenly when I reach there the stall that sells7 Broomstick is still closed because it was still early. Then I saw a woman selling Bibingka in the area so I parked my scooter and went to buy.

I found out that they were still cooking while many people were buying. I was amazed because they still use the old way of cooking. They used the clay pot, fired under it and fired above using charcoal. We cooked Bibingka before and we also used a clay pot.

I am glad the woman made me choose my Bibingka. My youngest daughter loves to eat a bit scorch Bibingka , so I picked those with scorch.

Bibingka was made from Rice flour, sugar, coconut milk, baking powder, and grated coconut. This delicacy is very important to me because it is my grandparents favorite especially my grandfather who is very close to me.Bibingka is also prepared during All souls day every year and my grandparents cooked this one with the other delicacies.

I saw how she cuts the banana leaf for the Bibingka

When I arrived home from the local market I asked my eldest daughter to clean and wash the fish and vegetables before putting them inside the refrigerator. While my youngest daughter is boiling water for their milk and my coffee with milk while my daughters was drinking milk pair to Bibingka.

My daughter’s and I are eating Bibingka while drinking my coffee with milk , while my daughters are eating Bibingka while drinking milk when one of my friends called me. She called me and she wanted me to come to her house because her Tambis ( Watery Rose Apple) fruit has many fruits and she wants me to enjoy harvesting it. She wants me to go to her house as soon as possible so I just put my coffee mug in Blaze's pocket and drive to her house. I am glad I bought extra Bibingka so I brought her some.

When I arrived at her home, she called me to come up on the second floor , where we chatted and showed me the view from her window of her Tambis fruit tree with lots of fruit but it was covered by the leaves.

Here are the Tambis that I picked and I was amazed because it was not sour but sweet and juicy which is very good to eat during sunny weather. IWe were enjoying our chit chat but I remembered that my daughters are waiting for me home so I waved goodbye to my friend. My daughters are really waiting for me home, especially my youngest.

After I found the Bibingka vendor place, I kept coming back to buy her Bibingka and this time I tried to pair it with Coffee, Milk and a ground Cinnamon powder. My husband told me to try drinking coffee and adding it with ground cinnamon powder for health benefits so I followed him. I found out my Coffee tastes more yummy and more aromatic with the Cinnamon.
