Hello Foodies Bee Hivers!
I'm excited to share my 1st successful baking of Ensaymada, this is very special to me that's my I also make the frosting and filling special.

Dough

These are the ingredients I used for the dough.

In making a dough, I first combined the water, instant dry yeast and sugar, then the eggs and flour. After mixing them together using a spatula add the butter and knead it. It may be messy and sticky at first, I knead it for about 18 minutes because I'm not really good in kneading. If kneading it using a stand mixer with a dough hook it is finished in 12 minutes.
Always do the window pane test, if it does not tear then it's done. Form it into a ball, put it in a greased bowl and grease the top part to avoid forming a skin that will make the dough not to rise well.

Let it rise for 30 minutes to 1 hour. Punch or press the dough to release the air that's produced during the first rising to avoid the sour smell and taste.

I form it into a log then make 50 grams per cut. If your working area is airy or if using an electric fan make sure to cover them with plastic or cloth to avoid drying.

Form them into a ball and put them in a greased molder. Let them rise for 2 and 1/2 hours, don't forget to cover them.

After rising them, you can bake it in a pre-heated pan at 180°C for 10-12 minutes. Ovens are have different heats, make sure to check it after 8 minutes.

After taking them out in the oven I let them cook through in their molder for 1 minute then let it cool on a cooling rack. You can transfer them in a pan while waiting for the filling.

Filling

We only need four ingredients for cream cheese frosting/filling; 200 grams creamcheese, 100 grams butter, 2 Tablespoon milk and 175 grams powdered sugar, vanilla and salt are optional.

Make sure that the cream cheese is chilled but the butter is soft to touch but not melting. Beat them together until well combined, add the milk and gradually add the powdered sugar and mix them for a minute. Do not add the powdered sugar in one go or else your table will be a mess, it sometimes happened to me. 😅

I made a hole at the top of the bread using a chopstick. I put the frosting in a piping bag with a piing tip for easier filling.

I also spread some cream cheese frosting on the top.

Finally grate some cheese, as much as you want. More cheese, more tastier.

This is so yummy when paired with coffee or milk, can be your snack of dessert.
