Ragi flour Vegetable Idlis served with Mint chutney!๐
These cute little idlis were super yumm and is the best breakfast option for fulfillment of your tummy!๐
How to make?
โ In a bowl, add 1 cup ragi flour, 1/2 cup suji (you can use rice flour instead), salt to taste, red chilli powder, black pepper and mustard seeds.
โ Add chopped vegetables like beans, coriander, karhi leaves, yellow-red bell peppers and grated carrot.
โ Mix everything well and add 1/4th cup curd and gradually add water to make a thick consistency batter.
โ The batter should be without any lumps and a bit flowy in texture and a bit thick.
โ Let it rest for about 10 minutes.
โ Add a pouch of non-flavored ENO. You may use baking soda too.
โ Immediately add 2-3 drops of water on the eno powder and mix it with the batter. Make sure you mix the contents in the same direction either clockwise or anticlockwise.
โ Be gentle while mixing and you could see the batter being puffed up with air bubbles.
โ Now take the idli stand. Grease it using oil and pour the batter into them.
โ Put it in the idli maker/ you may use pressure cooker too (but without its rubber and whistle).
โ Let it cook for about 7-8 minutes, then check it using a skewer, if it comes out clean then the idlis are ready to be served!
โ Enjoy them with Sambhar or mint chutney just like I did. ๐โค
