Maybe it is a lazy mans meal prep but that doesn’t negate the fact that the result is usually delicious. Think pulled pork (jackfruit) sandwiches, curries, Dahl’s, stews (yum, love stews), pretty much anything you can think of. I wouldn’t mind adding such an apparatus to my arsenal myself :)
