So this is the winter season here in India, and Winter is the time for abundant vegetables specially for the green leafy vegetables that are considered to be one of the healthiest food option. So I am going to make chutney of green veggies with some other healthy ingredients today.
If you are not familiar with the term 'chutney', it is a side dish that is spicy or savoury and can be made in many styles with different ingredients. Basically it is gluten free, made with veggies or fruits and it is used to increase the flavours of your food.
The green chutney I am going to share today is commonly used with many snacks in India like Samosa, Sandwiches, Bhelpuri, cutlets, fritters. It can be simply enjoyed with Roti or rice too 馃槉 it tastes delicious, very easy to make and full of health 馃槉
Ingredients
One cup of tightly packed Fresh Coriander leaves
One cup of tightly packed fresh Spinach leaves
4-5 cloves of Garlic
2 Green chillies
2 small Indian Gooseberries
Chaat masala
Salt according to taste
A small amount of water
If you have fresh Mint leaves available, you can add them too half cup of leaves. As I don't have fresh mint leaves, I am going to add chaat masala, the spice mix salt powder with Mint flavour.
To make the chutney more spicy, you may increase the quantity of Green chillies.
Let us start making it
Rinse well all the Green leaves, Green chillies and Gooseberries in the water. Roughly chop them.
Peel off the skin of Garlic cloves.
Put all the ingredients in a mixer jar, add small amount of water, probably 2 teaspoons of water will be enough to make a fine chutney. Add more water if required to make it smooth, but be careful don't add too much or it will make watery.
Now Grind it to make a smooth chutney.
Transfer to a bowl and it is ready to be served.
Enjoy it with your snacks. Your eyes too will be pleased with its nice green color. 馃槃
Once prepared, this chutney can be used for 2-3 days. Store it in fridge.

We all know the health benefits of Green leafy vegetables, all their nutrients can be best absorbed by our body if these veggies consumed in their raw form. No cooking and everything in them will be intact for us. Green is detoxifying our system and so building our immunity.
Indian Gooseberries have 8 times more Vit C than Orange, twice the antioxidants of Acai Berry, and around 17 times that of a Pomegranate fruit. So you may see how healthy it is.

A few tips at the end
If Gooseberries are not available in your location, you may replace them with a teaspoon of lime juice. Here in winters Gooseberries are abundantly found and they are full of Vit C too, so I am using them.
You may replace chaat masala too if not available, use normal salt, a pinch of cumin powder and black pepper powder.
Always add small amount of water in starting, add later if required more.
