This is the season of green leafy veggies and we all are aware of the high nutrients content found in the green veggies. And you know Potato is evergreen found whole of the year. So this combination I am going to share with you today, a very easy to make, tasty as well as nutrient rich dish. This is called Aalu methi here. Aalu means Potato and methi means fenugreek. It is a commonly prepared dish mainly in winter season. As fresh Fenugreek is available during this time of the year.
Medium sized Potato 4
Medium sized tomatoes 2
Medium sized onions 2
Fenugreek leaves one bundle approx 250 gm
Garlic cloves 3-4
Green chillies 2-3
Cumin seeds 1 tspoon
Dry coriander powder 1 tspoon
Turmeric powder 1tspoon
Salt according to taste
Oil to fry
I have fresh potatoes of this season. You can see the soil still sticking upon them. Just wash them, no need to peel. Cut them into small pieces.
Finely chop Tomatoes, Onions, Green chilllies and Garlic in very small pieces.
Pour some oil in the pan. When oil comes to boiling temperature, add cumin seeds let them crackle.
Add Garlic to the pan as the cumin seeds start crackling. Add onions followed by garlic.
Let the onions get little pinkish/brownish color. Add tomatoes to the pan.
Let the tomatoes cook for one minute, now add all the spices turmeric powder, coriander powder, salt, red chillies if you want it to more spicy. I have added a spoon of green chutney too.
Mix them well and let the mixture cook for 2-3 minutes.
As the oil seems separated from the mixture, add Potatoes and mix it well. Cover the pan. Keep the flame of gas to the low.
Potatoes will take time to get cooked, meanwhile we will pluck methi leaves from the stems after washing them thoroughly. You can take the temder stems on the top too. We will chop them into smaller pieces.
Check after 10 minutes, Potatoes must be softer now. Add fenugreek leaves and mix it well. No need to cover it now. Let it cook opened. I have added them in two batches.
No need to cook Fenugreek for long time. Just two minutes of cooking and it is ready. đ
Now our dish is ready. You may simply enjoy it as it is or have it with Rice or Bread. It tastes delicious. đ
