This is English elephant foot Yam. In Hindi it is known as OL or Suran.
This vegetable is known for its itchy throat nature. Many people have seen this vegetable in the market but don't like to eat this because of this ITCHY nature.
This veggie has fibrous, health benefits and used for medical also.
It is useful in improving immunity in the body.
Yam is useful in anti- aging benefits, that helps prevent wrinkles.

It can be cooled in various forms including curry,fried, mashed and even as a pickle.

So today we going to make chutney of Yam or suran.

I am not making this recipe with onions and tomatoes. Ifyou want to add onions and tomatoes then you may add it with put any hesitation.

HERE I AM MAKING YAM CHUTNEY

●First clean the Yam and wash it with water.

●Now peel it properly and chopped into small pieces.

●Then put the pieces into pressure cooker for 4 whistles or cook until they become soft.

● after opening the lid of the cooker, mash the Yam with masher, like a chutney.

●Now heat Ghee or butter in a pan, add cumin seeds, hing (asofeodita), ginger paste, green chillies and turmeric powder.

●Then add boiled suran/Yam into the pan and mix it well.
Add turmeric powder, red chillie powder, salt and coriander powder.

● Mix it well and let it simmer for 5 min in meduim heat flame.

●finally at last add 1 lemon juice and mix it well.

●Garnish it with coriander leaves and serve hot with Chapati or rice.
