2-3 cups of water (2 cups if you like creamy soup, 3 cups if you like more watery)
2 tbsp brown sugar, depending on your taste
1/2 tbsp chicken bouillon powder, , depending on your taste
1/2 tsp cayenne pepper
1 lime, squeezed
2 frozen udon noodle packs
1 green onion, sliced
handful of cilantro, roughly chopped
Your choice of protein, optional
**If you have no other ingredients, the 5 ingredients of curry paste, sugar, coconut milk, lime, and noodles will already make a divine dish!**
Instructions:
Heat pan on medium heat and add oil to cover the pan.
Add shallots (or onions), garlic, ginger and cook for 2 minutes.
Add red bell peppers and thai chilis (if using).
Add red curry paste and mix well. Add coconut milk and mix well. Add water.
Add sugar, chicken bouillon powder, cayenne pepper, and lime.
Turn heat to medium high. Add frozen udon noodles and cook for 3-4 minutes. If you're using udon that is not frozen, then cook for 1-2 minutes only. Make sure the udon is al dente and you don't overcook it.
Put udon and soup in a bowl. Garnish with green onions and cilantro. Put your favorite protein on top. And enjoy!
