El cocido es probablemente el plato más típico de Madrid, y dado el frío que hace últimamente, siempre se agradece tomar un plato caliente y reconfortante.
The “cocido” is probably the most typical dish in Madrid, and given it is extremely cold lately, it is always grateful to have a hot and comforting dish.
El cocido es como la tortilla española en el sentido de que es uno de esos platos españoles que es muy sencillo de cocinar pero verdaderamente difíciles de conseguir un buen resultado final.
The cocido is like the Spanish omelette in the sense that it is one of those Spanish dishes that is very simple to cook but really hard to get a good final result.
Para probar un cocido sublime, uno de primera categoría como corresponde a un manjar tan exquisito como este, recomiendo ir al restaurante La Cañada. Este restaurante situado a las afueras de Madrid, de los cuales son propietarios la familia Verdasco (sí, el tenista), fue fundado en 1970, tras varias generaciones sumadas al enorme éxito que tuvieron con su primer restaurante La Bola (1870). La Bola también lo recomiendo, sobre todo si queréis comerlo por el centro, aunque es ligeramente más caro (21€ el cocido en lugar de 19€ que cuesta en La Cañada) pero se encuentra muy cerca del Palacio Real.
To try a sublime cocido, one of the first category such an exquisite delicacy like this, I recommend going to the restaurant La Cañada. This restaurant located on the outskirts of Madrid, owned by the Verdasco family (yes, the tennis player), was founded in 1970, after several generations, plus the enormous success they had with their first restaurant La Bola (1870). I also recommend La Bola, especially if you want to eat a good “cocido” it in the center, although it is slightly more expensive (21€ the stew instead of 19€ that costs in La Cañada) but it is very close to the Royal Palace.

As yesterday was Christmas day, the entrance was decorated in a subtle and pleasing way to the eye.
El cocido se sirve en un puchero de barro, primero te ponen un plato con fideos, en el que se vuelca la sopa del puchero. Esta sopa ha sido cocinada durante 6horas para que coja todo el sabor de los demás ingredientes que os voy a comentar a continuación:
The stew is served in a clay pot, first they serve a plate with noodles, in which the pot soup is poured. This soup has been cooked for 6 hours so that it takes all the flavor of the other ingredients that I am going to comment below:
Después de la sopa viene el segundo vuelco, que nos trae los garbanzos, la patata, el morcillo de ternera, la gallina, un trozo de tocino, chorizo y codillo de jamón. Como comento, al estar la sopa cocinándose alrededor de 6 horas con estos ingredientes, tiene un sabor celestial y divino.
After the soup comes the second overturning, which brings us the chickpeas, the potato, the veal morcilla, the chicken, a piece of bacon, chorizo and knuckle of ham. As I commented, being the soup cooking for about 6 hours with these ingredients, it has a heavenly and divine flavor.
Estos manjares vienen acompañados de repollo, salsa de tomate con comino, guindillas y cebolleta. A mí personalmente me gusta echarme todo, y dar mordiscos de vez en cuando a la guindilla para tener una sensación un poco a picante en la boca. Un ritual, que hace de la degustación de este plato toda una experiencia para el paladar de cualquier comensal que se precie.
These delicacies are accompanied by cabbage, tomato sauce with cumin, chili peppers and chives. I personally like to throw everything, and occasionally bite the chili pepper to have a slightly spicy sensation in my mouth. A ritual that makes the tasting of this dish an experience for the palate of any person.

Algún día os enseñaré como hacerlo en casa, ya que no hay mucha gente que tenga un puchero de barro para cocinarlo ni un lugar donde poner carbón para que se realice a fuego lento.
On the website of the restaurant they explain how to prepare a good stew:
"We put the chickpeas in soak the night before. In a clay pot, handmade, we introduce the ham knuckle, the morcillo meat, the bacon, the chorizo, the chicken and the chickpeas. We add water and put the pot on a slow char fire of oak for 6 hours. One hour before finishing the cooking, add the potatoes and salt. And the stew is ready to eat!"
Someday I will teach you how to do it at home, since there are not many people who have a clay pot to cook it or a place to put charcoal to make it simmer.
