When you pay a little more you can get very clean stuff from the supermarket, so there's choice. But the vegetables, eggs and butter are not nearly as flavorful and fresh as the ones from the smaller vendors

Agree, there's almost always a cheaper option if you don't mind the drop in quality - for example, many people just buy vegetable ghee instead of butter, and the price of that is at about $1.30 per kg.
