Happy Pi Day! But, of course, as a carnivore I don't eat pie so I though I would share some photos and descriptions of my meal prepping today and about a new little twist to my steak marinade process. Today I prepped a selection of New York Stip and Ribeye steaks.
The process started out as usual with a heaping spoonful of minced garlic on each steak and then to add a bit of variation I took a little inspiration from my recent visits to the AYCE Korean BBQ restaurant and modified my liquid marinade. Normally I just use a decent amount of Dale's Low Sodium but today I added a generous amount of Korean BBQ marinade and melted butter to the Dales and whisked it thoroughly before adding it to the steaks.
My normal routine is to get the steaks to almost room temperature and then add the marinade while I go start up my sear box on my smoker. I let the steaks bathe in the yummy goodness of the marinade while the sear box gets up to temperature. Remember to NEVER add salt-based seasoning until right before you place the meat on the grill or it could pull some of the moisture out of the meat and you will lose some of the juiciness.
Once the sear box is up to full high temperature I place the steaks on the grill and begin the searing process. I have to have the grill on full heat because I love the steaks cooked so rare that I need the fat charred and the meat a nice deep bronze before the internal temperature gets too high. I usually take them off the grill once the internal temperature hits about 110-115 F and then let them rest inside the kitchen for about 15 minutes before cutting.
The result is carnivore perfection and I have meals for my wife and I for a few days. This batch was 5 Ribeyes and 3 New York Strips. The marinade was a huge hit with my wife and I fell in love with it instantly as well. Another little trick I picked up from the Korean BBQ place was using kitchen shears to cut my steak up when I plate as opposed to fighting with a fork and knife as I'm eating it! Sounds crazy but it is so, so much better...lolol
