We were first introduced to the Mosaic Long Bean in 2016 and have beem enjoying them and saving our own seeds for them over since. While they are not as long as the Chinese Noodle Beans that we offer, they are longer and more slender than green beans, and seem to be more pest resistant too.
We like to pick the beans between six and twelve inches, and enjoy them raw, steamed, or stir-fried. They are also great pickled and freeze well for us. When grown on an arched cattle panel, the light purple bean pods are nicely presented for easy picking.
