An all time favorite of mine has always been carpaccio. I just never really thought about it with fish until I came to Zanzibar. Now one of my favorite dishes on the Island. Beautifully thin slices of fresh raw tuna that melt away in your mouth. I have had plenty of this gorgeous fish on the island and the nice thing is, no one makes it the same. Some do it to accent the saltiness of the fish with capers, peppers and soy, others highlight the soft melt in your mouth with pepper,oil and oyster sauce... Either way, it's hard to get a bad one, Yu UMMMMMMM
