La Alcachofa se consume toda... ¿Cómo?

Había publicado un post en la comunidad de liketu@liketu, acerca de la procedencia de unas hermosas Alcachofas, o alcauciles, que compré y quedé en presentar la receta el día en que las preparara. Ese día llegó y fue para bien, pues me quedó tan delicioso, como para repetir.
Decido postearlo en esta comunidad, @la cocina creativa, administrada por mi gran amigo y chef, edwin357@edwin357. Siento que es la primera vez que lo visito con una receta, si no recuerdo mal.

Además de que veremos la preparación de las alcachofas, también verán que para mí, este cardo, no tiene desperdicio. Todo se le puede comer sin problema. Dicen que los pistilos son los que se deben retirar del corazón de la alcachofa, pero yo no lo comparto, como muchos otros profesionales de las ollas y vegetales. Así que manos a la alcachofa…

I had published a post in the like tu community, about the origin of some beautiful artichokes, or artichoke, that I bought and I was about to present the recipe the day I prepared them. That day came and it was for good, because it was so delicious, as to repeat.
I decided to post it in this community: the creative kitchen, managed by my great friend and chef, Edwin 357. I feel it is the first time I visit him with a dish, if I remember correctly.

Apart from the fact that we will see the preparation of the artichokes, you will also see that for me, this cardoon, has no waste. Everything can be eaten without any problem. They say that the pistils are the ones that should be removed from the heart of the artichoke, but I do not agree, like many other professionals of pots and vegetables. So hands to the artichoke....

Ingredientes

  • 2.- Alcachofas/alcauciles

  • 2.- Litros de agua

    Para la crema

  • 1.- Lata de tomates cocidos y cubeteados

  • 200 ml.- De Crema de leche

  • El jugo de medio limón

  • 3.- Dientes de ajo grandes

  • 1/2.- Taza de aceite de oliva

  • Sal al gusto

  • Pimienta negra molida, al gusto.

Ingredients

  • 2.- Artichokes/artichokes

For the cream

  • 1.- Can of cooked and diced tomatoes

  • 200 ml.- Of milk cream

  • Juice of half a lemon

  • 3.- Large cloves of garlic

  • 1/2.- Cup of olive oil

La alcachofa o alcaucil, es un tipo de cardo, usado generalmente para preparar una gran variedad de recetas exquisitas, pues ese sabor cremoso y delicado que posee su pulpa, invita a todos los cocineros y amas de casa a destacarse con sus platos para no pasar desapercibidos en cualquier restaurante u hogar.

Este vegetal está compuesto por un corazón, que no es más que el centro y la parte más deliciosa, pues en él se concentran todos los sabores y se suele consumir solo, aprovechando su versatilidad para utilizarlo en cada plato sin tener que consumir las hojas. Es de color crema amarillento, de textura esponjosa y suave a la vez.
Lashojas de la alcachofa, son de forma puntiaguda, y lo lindo de ellas es que también guardan en su parte inferior, una pulpa que es la que al untarla con la crema o simplemente sola, se puede comer dando un apretón entre dientes, para así extraer esa explosión de sabores.

El tallo es la parte que muchos cocineros desechan, pero tal como ocurre con el pistilo, aprovechan al máximo y no lo desechan, sino que lo agregan al plato o también lo consumen solo.
Los Pistilos son los que están encima del corazón en forma de filamentos que a algunos cocineros tampoco les gusta su textura, porque le da un sabor levemente amargo al plato. Sabor este que solo dura segundos al consumirlo, pues desaparece al instante al unirse en boca a los demás ingredientes y le da ese toque diferente.

This vegetable is composed of a heart, which is nothing more than the center and the most delicious part, because in it all the flavors are concentrated and it is usually consumed alone, taking advantage of its versatility to use it in every dish without having to consume the leaves. It has a yellowish cream color, with a spongy and soft texture at the same time.
The leaves of the artichoke are pointed, and the nice thing about them is that they also keep in its lower part, a pulp that is the one that when spread with cream or simply alone, can be eaten giving a squeeze between teeth, in order to extract that explosion of flavors.

The stem is the part that many cooks discard, but as with the pistil, they make the most of it and do not discard it, but add it to the dish or eat it alone.
The Zpistils are those that are above the heart in the form of filaments that some cooks do not like its texture, because it gives a slightly bitter taste to the dish. This flavor only lasts for seconds when consumed, because it disappears instantly when it joins the other ingredients in the mouth and gives it that different touch.

Preparación

1.— Lavar bien la alcachofa, yo suelo dejarlo remojando un rato en agua con una cucharadita de vinagre. Una vez limpio, se raspa o pela con un cuchillo, la parte del tallo, se corta y se le dejan unos dos o tres cm para asirlo y además aprovechar la pulpa del mismo.
2.— Con una tijera cortamos las puntas de las hojas en todo el cardo. Se le retiran y desechan las hojas muy delgadas que están justo encima del tallo., respetando las más grandes, que son para el consumo.
3.— Se colocan dentro de una olla con dos litros de agua con sal, de manera que las flores queden cubiertas para que su cocción sea pareja, por 40 minutos.

2.With a scissors cut the tips of the leaves all over the thistle. Remove and discard the very thin leaves that are just above the stem, respecting the larger ones, which are for consumption.

They are placed inside a pot with two liters of water, so that the flowers are covered so that they cook evenly, for 40 minutes.

Para la Crema

  1. Se cortan los tres ajos en trozos pequeños, luego se pisan con el mortero, se le agrega allí mismo, la media taza de aceite de oliva para que se saborice más el aceite,
    2._ La mezcla de ajo con el aceite se vacía en una sartén previamente caliente, se sofríen ambos y una vez sofritos se le coloca el tomate troceado tal cual viene de la lata.
    3._ Una vez cocido el sofrito de tomates, aceite y ajos, se agrega toda la crema de leche, se mezcla hasta que esté uniforme y se sazona con sal y pimienta al gusto.
    4._ Finalmente, se licúa toda la salsa y obtendremos una deliciosa crema color naranja, para acompañar la deliciosa alcachofa.

Pasados los 40 minutos, las alcachofas se escurren en un colador, y dejan enfriar, para montar los platos y separar sus partes y consumirla sin desperdiciar absolutamente nada.

After 40 minutes, the artichokes are drained in a colander and left to cool, to assemble the dishes and separate their parts and consume it without wasting absolutely nothing.

Se va deshojando y colocando en un plato para consumirla al gusto de cada cocinero. Yo, por ejemplo, las deshojé y fui colocando las hojas carnosas en un plato redondo, y en el centro tenía ya un bol pequeño, con la salsa, de manera que se pueda ir consumiendo hoja por hoja.
¿Que cómo se hace?, pues, se agarra una hojita, y por la parte inferior, donde tiene su pulpa, se muerde y raspa hacia afuera, entre dientes, para sentir en boca esa explosión de sabores, combinando la crema con la suavidad de la alcachofa. Eso es extremadamente alucinante.

Seguidamente, vamos en busca del corazón de la flor, que como dije antes, es la parte más deliciosa de las alcachofas. Es cremoso, y suave a la vez, en su interior se encuentran los pistilos. Estos son unos filamentos que tal vez a algunos no agraden por su textura; sin embargo, al cocinarse bien, ellos también se suavizan y ese punto amargo que tienen, se convierte en parte del sabor y homogeneiza de tal manera la sazón que pasa desapercibido. Así mismo, quien no esté de acuerdo perfectamente los puede retirar con una cucharilla pequeña y el resto del corazón lo puede consumir igualmente.

Next, we go in search of the heart of the flower, which as I said before, is the most delicious part of the artichokes. It is creamy, yet soft, and inside are the pistils. These are filaments that some people may not like because of their texture; however, when cooked well, they also soften and that bitter point they have, becomes part of the flavor and homogenizes the seasoning in such a way that it goes unnoticed. Likewise, those who do not agree can perfectly remove them with a small spoon and the rest of the heart can be consumed anyway.

Ah,olvidé de contarles que con el frío del invierno en Buenos Aires y teniendo un buen vino en casa, no perdí la oportunidad y lo maridé con un tinto, "Frontera" de la bodega "Concha y Toro" de Mendoza, Argentina. No podía pasar nada mejor. Disfruté al máximo de este plato gourmet.

Oh, I forgot to tell you that with the winter cold in Buenos Aires and having a good wine at home, I did not miss the opportunity and paired it with a red wine, "Frontera" from the "Concha y Toro" winery in Mendoza, Argentina.
