Time to Eat!

Cooking from Scratch...

I have been meaning to make a post about this dish, but every time I cook it, I forget to take pictures, that is, until tonight! I actually had some time tonight, and since my wife cooks a lot, I decided to make something I knew she would like, and something neither of my newer roommates have had yet. I like cooking from scratch, so tonight I will walk you through how I make Sausage Biscuits and Gravy...

For the Biscuits

2 Cups all-purpose flour
1 Tablespoon baking powder
1 Tablespoon granulated sugar
1 teaspoon salt
6 Tablespoons unsalted butter VERY COLD (I recommend freezing your butter)
3/4 cup whole milk
Cheese Grater
Baking Tray

When it comes to biscuits, the trick is to have very cold butter and milk and to not work your dough too much. I put my butter in the freezer an hour or two before I start, and my milk right when I start. I mix all of my dry ingredients, then use the cheese grater to grate the frozen butter, then add the milk. I use a fork to mix it until it is thoroughly tacky, then use my hands to "fold" the dough until it is thoroughly mixed. I use a handy cup because I do not have a cookie-cutter. As I cut the biscuits, I re-fold the dough until I do not have enough dough left to make another biscuit. I then take any little bit left and have either one larger biscuit or a small one. One strange one...

For the Sausage Gravy

1 Pound ground pork sausage (I prefer Bob Evans)
2 Tablespoons butter
1/3 cup flour
3 cups milk
1/4 teaspoon garlic powder
1/4 teaspoon seasoned salt
1/4 teaspoon salt
1 teaspoon black pepper

Let's go!

Start by browning your sausage until it is thoroughly cooked. Keep the grease, and then melt two tablespoons of butter in the meat. Add the flour and other dry ingredients, then continue cooking on medium-high until the flour has browned. Add the milk, and whisk the mixture constantly while you bring it to a boil. When the gravy is as thick as you would like, remove it from the heat and serve! Break open your biscuits add some gravy and eat! Again, I will walk you through with photos...

There you have it, homemade Sausage Biscuits and gravy from scratch. It is a very good meal and not as difficult to make as you may think. You can also use just the biscuits with a lot of butter and add some honey! Awesome, just like you, and as always...
