My intention with this post was just to share this simple recipe but as I started writing my thoughts went in another direction so I decided to go with the flow and ramble about the topic of preparing food, intention that goes in this process.

First of all, I have to say that I am not someone who's cooking on daily basis so I guess most of my enjoyment when doing it comes from the fact that I make something when I feel like it. Things would probably look a lot different if I had to make all three meals for a family every day. One thing I really like is baking and making cakes so in our household I would be in charge of desserts most of the time.

Even with the thing I enjoy doing, I would go for a simple recipe that doesn't require too much time. One of the main reasons is that I would rather put all my intention from start to finish in something simple rather than going for something complicated that will probably get me frustrated and wanting to quit somewhere along the way. Does that makes any sense? :) I think that a lot of this also comes from our lifestyles - it's not the same making food for one person and for a family, it's not the same if you work a full time job and have other people to take care of and living alone, working from home... Even living in the city and countryside can make a big difference - we literally have maybe one or two food delivery options here where I live that would probably cost a lot, we are used to having a garden and homemade food...

As someone who spends too much time in front of the screen, always playing music, daydreaming and being 'in their head' there are few things that get me back in the present moment, that keep me grounded and make me put my attention in here and now. Some of those things are spending time in nature especially by the water, garden work or any outdoor task on our property, expressing gratitude for the small random things, journaling and making food as well. I have noticed that I put a lot more effort and intention when its our own homegrown food that I picked from the garden compared to instant noodles for example. :) I believe that everything has energy and therefor its important to prepare food with good intentions and good vibes. This can go for anything we're doing in life! When I do garden work, planting seeds and taking care of the veggies and fruits, I always put all my positive thoughts and energy in that work. I guess I should also pay attention and apply this in other areas of my life as I really do believe it can have a huge positive impact in the quality of our lives.

Finally the recipe

Crush biscuits (we used ladyfingers ones) by hand in dessert bowls or any smaller regular cups that fit one serving.

Prepare pudding according to the instructions, let it cool down for a few minutes then spread over the biscuits. We used vanilla pudding as it combines well with berries.

Put frozen raspberries and sprinkle with tiny bit of sugar if needed. We are using up frozen raspberries we have from the garden but I think that fresh ones would be as good. Of course, other berries can be used as well, you can even combine a few. I will definitely try out different options in the future since we also have frozen strawberries and blackberries.

Final step is adding whipped cream on top and decorating as you wish. Let it cool down a little bit before serving.

Since we went for ladyfingers biscuits, I used half of it as decoration. Sprinkles would also look good but we didn't have any on hand so this simple decoration is all I did. At the end, it was a tasty and refreshing dessert that we all enjoyed so that's what matters the most!

Thank you for stopping by and I wish you a lovely day!
