Hello Foodies,

Today I want to show you one of the street food recipe that has been popular for more than 100 years. And many nations including Pakistan, India, Bangladesh and few others have it in their streets. It's an interesting recipe and also the output is pretty good to eat too. Though considering it is oily food, make sure to consume it in moderation too.

Here is my final output of the recipe.

Ingredients


  • Moong dal
  • all purpose flour
  • turmeric powder
  • paprika or chilly powder
  • coriander powder
  • fennel seeds
  • jeera seeds
  • mango powder
  • sugar
  • salt
  • oil
  • water

Method


Follow the method here to make the dough of the kachori before we can deep fry the same.

  1. Take 1 cup of all purpose flour, rava and add the 1/2 cup water into the same.
  2. Make sure to make the soft dough with it like you do for pizza base or say for the naan.
  3. Make sure to add the ghee into the dough to make it soft and sticky.
  4. Keep the dough aside for next few minutes.
  5. Take one pan and add the moong dal into it for 2 hours of soaking.
  6. Drain the water out of the dal after 2 hours and separate the soaked mixture aside.
  7. Grind this mixture into the mixer and make sure to add the herbs if you want them. Also add some salt into this mixture for a taste.
  8. In another pan, take some oil, add cumin seeds, chilly powder, ginger powder, turmeric, coriander powder and fennel seeds.
  9. Now saute this mixture for 4 minutes or so.
  10. Add the soaked moong dal mixture into saute mixture.
  11. Make small balls using this mixture and set them aside for further cool down.
  12. Now take out the earlier soft dough and make sure to small balls out of them.
  13. Add the moong dal mixture in the center of the dough.
  14. Now you can flat this base and turn it in the right circular shape.
  15. Do this for all the soft dough with mixture and turn them into flat circular shapes.
  16. Deep fry this until it turns into the brown and yellow.

That is all. You can also add the mint chutney or the tamarind chutney for serving it. A lot of folks mix the tomato sauce and other chutneys for the mixture. It tastes good if the spicy chutney is kind of have mix of sour and sweet taste into it. So try to mix the multiple sauce and see if you can get the taste that you want. You can also add the sev or the other garnishing items as well.

Note that, make sure to use the oil which is kind of good for your health. This is one reason I have not listed the oil type here. You can use the oil which is less sticky. Sunflower or the peanut oil can be used but it depends on your choice. This is street food recipe and if you try it on road, it would not be the most healthy food you can consume, so adjust according to your taste at home.
