An acquaintance once shared a simple fish recipe although no exact measurement of ingredients were given. She just mentioned that she often bakes pieces of fish in chilli paste and sliced onions wrapped in tin foil and her family loves it.
So I decided to give it a try. I used a whole medium sized mackerel and thinly sliced squid resting on chilli paste and then baked for a few minutes. When the fish is cooked, I garnished with some thin slices of okra. The heat from the bake is sufficient to lightly cook the okra. Anyway, I know some people actually eat raw okra.
The fish actually tasted good with steamed rice. Another plus point is that there was no oil splatter since the fish was wrapped and baked in foil. Will definitely cook this again.
